Sepia Scenes


Me, feeding my grandparents' chickens. I was 2 or 3 at the time. I loved my grandparents' country home and have many many fond memories of the days I spent with my grandma. She has taught me many things in life and I often told people she was the smartest person in the world. My grandma, Shirley, is mostly of German decent and called me (still does) "Weitz". I cannot find this word in the German dictionary and may have the spelling wrong. Many times I asked Grandma what this meant as she said it with much love. She would just smile and say you are my Weitzel.

Coconut Cream Pie


I made this yesterday for Father's Day. One of John's favorites. He said it's perfect. I'll gladly take his word for it.

Ingredients:


3 cups half n half

2 eggs

3/4 cup white sugar

1/2 cup all purpose flour

1/4 tsp. salt
1 cup flaked coconut, toasted
1 tsp. vanilla extract

1 (9 inch) pie shell, baked

1 cup frozen whipped topping, thawed


In medium saucepan, combine half n half, eggs, sugar, flour and salt. Bring to a boil over low heat, stirring constantly. Remove from heat. Stir in 3/4 cup of coconut and vanilla extract. Pour into pie shell and chill 2-4 hours or until firm.


Top with whipped topping and remaining 1/4 cup coconut.


NOTE:
to toast coconut, spread in ungreased pan. Preheat oven to 350. Turn off oven and place coconut on highest rack. Watch carefully and remove when coconut has a light brown tint.

Sepia Scenes


My grandparents, Shirley and Theodore in their wedding photo. So many fond memories of a couple I never saw looking this young. Grandpa taking me for rides behind his riding lawn mower. Me holding up Grandma's pants while she fed the chickens. When I think of them, I think of hugs, playing hide and seek and love, a lot of love.

My Grandfather passed away a few years ago. His always smiling face and tall fishing tales will never leave me.


My grandparents had five children. Four daughters and a son. Out of those children, my mother solely resembles my grandpa as do my siblings and I. I think he's quite a handsome fella.

3. When is the last time you wanted to punch someone in the face? This is an ongoing thought. I punch like a girl but my friend Mr. Crowbar, well he doesn't.

17. Scariest thing you’ve experienced in the last year? Any moment a spider and I have been in the same hemisphere.


18. Do you wear a name tag at work? No, if people forget my name at work, it's a good day.

Summer Goals

Summer finally decided to show itself for a few days this week here in Wisconsin. Spencer and I took advantage of the sunshine and spent as much time outside as we could. I set up Spencer's pool Sunday night out on the deck. As soon as I unrolled the pool to blow it up, Spencer was sitting in the middle of it as he does every year, not caring whether or not he had any water to play in. The smile on his face was priceless.

Swimming is one of the few things that keeps Spencer's interest. It pulls him away from the t.v. and boredom of being an only child that does not understand pretend play. He has never once done any pretend play. His idea of playing with toys may be spinning the wheels on a car or seeing how far that dump truck can make it across the room if he stands on his bed. So, my challenge is to find and explore new ideas to keep us busy besides the walks to the park we can't wait to start.

I am open to any ideas! He is very interested in computers and animation. Particularly if music is incorporated. His teachers use a touchscreen at school so I have done the same at home along with headphones to keep out distractions for him. He loves the Starfall website. His attention span while it has grown, is still only minutes at a time. For instance, if we get out the play dough, he may have already lost the great enthusiasm he JUST had by the time I have gotten the top off the first color. He will say "all done" and that is that!

I realize this is one of the most unorganized blog postings I have done. My boy may be sweet but he is complex. I never know quite where to start.

Special K Bars



My sister, Tanya, over at The Sunday Baker blog is the most amazing cook and baker. This recipe, as do most of my recipes, came from her. I have yet to meet a person who can stop at just one. They really are THAT good.

Ingredients:

1 cup light corn syrup
1 cup sugar
4 T. butter
1 1/2 cup peanut butter
6 cups Special K cereal

Topping:

1 (6 oz.) butterscotch chips
1 (6 oz.) chocolate chips
1 square semi-sweet chocolate

Boil corn syrup, sugar and butter. Remove from heat and immediately add peanut butter. Pour mixture over cereal. Mix well. Press into 9 x 13 inch pan.

Slowly melt chips and chocolate square for topping on stove top, stirring often. Once blended, spread over cereal mixture while still warm.

Cool slightly and cut.
